An Unlikely Restaurant Venture

Dennis Simmons had never been in the restaurant business. He came from construction. But when opportunity knocked in tiny Hawk Springs, Wyoming – a dot on the map with fewer than 100 residents – he decided to try something new.

Opening a restaurant in a town that small is ambitious. Making it work requires becoming a destination – a reason for people to drive out of their way.

Robert Irvine arrived during the COVID-19 pandemic to find a restaurant with potential but struggling with the fundamentals. Owner Dennis and his daughter Dillon needed help turning passion into a sustainable business.

The Transformation

Beyond the physical renovation, Robert focused on building systems that would work for a father-daughter team in rural Wyoming:

  • Regular staff meetings
  • Revitalized décor that gave the space its own identity
  • Menu refinements that played to local tastes

A Wyoming Destination

Post-makeover, The Emporium has done exactly what a rural restaurant needs to do: become a destination. They’ve been recognized by Cowboy State Daily among Wyoming’s must-see stops, specifically for:

  • Smoked prime rib (Friday and Saturday nights – call for reservation)
  • Buttermilk-pecan pie
  • Unique local atmosphere

In 2024, the restaurant was rebranded and renamed to Don’s Restaurant, but the spirit and quality remain.
